Hell's Kitchen tv show: What happens to the customers?

I've been wondering:

1st: Do the customer's know there's a chance they won't get their meal, and will be told the kitchen is shutting down, and that they have to leave?

2nd: Are the meals free, and do they get anything in return if their meal is horrible or they don't get fed?

just wondering.... some of the customers seem so pissed when their meal sucks or the place is shutting down cuz Chef Ramsey is mad!

i read about this- it was either Time or New York mag- at the beginning of the season:

the customers get paid $50 to come to dinner with the condition that anything can happen. they know they are going to be on Hells Kitchen and probably behave accordingly.
i'm always surprised to see an irrate patron approach the chef b/c they're meal is late or whatever, it happened once last season and again this season, b/c i know now they do it for their 15mins of fame!
