Look at the episodes of the show on their website, or on a site such as www.imdb.com. They will certainly show up in the credits, as this is generally required by the vast majority of copyrighted material use agreements.
Additionally, obtaining them without having the right to (downloading them) is, of course, illegal.

They usually list what music is played in every episode.
If you check out www.tv.com for each episode you can find out which songs played in an episode. So once you know which episode it is you jsut go to it and under a heading "notes" they'll usually have written which songs were in it.
A sequence before each episode highlights a montage of past events. This may be scored to a classic rock song, particularly when the episode is important to the story arc. This was first done with the episode "Salvation", in which the entire season was recapped to Kansas's "Carry On Wayward Son". This continued with the season two finale.
The production team also created a "coming soon" sequence midway through season two, set to Nazareth's "Hair of the Dog".
