they didn't know much about how the body worked - it was thought that fluids in the body (blood,bile etc.) could become too pressurised and cause illness and so the pressures would be released by bleeding or with leeches or many other 'cures'.

To release the bile? The only thing I can think of during that time period that would refer to that is the Black Plague.
