I guess it was probably just a joke after Courtney Cox got married. They probably gave her crap about the double-name and therefore they all got it. I'm sure they all know David Arquette really well too.
That was the first episode after Courtney Cox got married and became Courtney Cox Arquette. They did it just to be funny.
