Why were there no QWERTY keyboards on Kirk's Enterprise?!

Because it's supposed to be a show about the future where everything is done with universal codes and symbols. What if you get someone in the seat that can't type 60 words per minute or can't spell for crap...spell check might not catch the mistake before torpedoes have been launched against the wrong planet. Universal symbols keep things safer.
They always dictate their notes into either their officer's or personal logs (journals) and control the computer with verbal commands using super advanced voice recognition software and steer the Enterprise using buttons, switches, and handles.
