Question: It just occurred to me. A twenty-something-year-old and a middle aged man sleeping in the same room. Was there any particular reason for it, or was it just ... endearing?!

i believe there were only two bedrooms and father jack had the other one (i'm sure neither ted nor dougal would prefer to share with jack), there was never a reference as to whether mrs doyle lived there or not so i don't think there was a third bedroom.
It maybe that it was fitting (as a sort of subtle joke) because young children often share a room with their parents - and dougal is very much like a small child who depends on ted?

well neither one could sleep with mrs. doyle she would keep you up drinking tea all night, jack would be the same only its whiskey with him and the stench...well.....dougal would need the company of ted as he always had a teddy.
Would you want to sleep with Father Jack or the housekeeper Mrs Doyle? Seriously, comedies need creative tension and the bedroom scenes allowed for the development of their characters.

morecambe and wise used to share the same bed - in the tv sketches that is! helps the dialogue move along I suppose, rather than shouting through the wall.
As Chic Chick says, it's an affectionate homage to Morecombe and Wise who perfected the cosy just-before-you-go-to-sleep chat. For another great example of this underrated technique watch Bert and Ernie on Sesame Street. Genius.
