it goes back to his days of being an actual Monk at a chinese monastary. He can't remember his time there, but it explains his uncanny ability to figure stuff out. He his quick witted, like a mountain cat, all thanks to his monk brothers.. The speaking chinese is simply him having mental vocab-flash backs.

think it was because he was sick, or poisoned or something like that and was talking in a different language and was unaware of it....i may be wrong because i haven't seen those episodes in a long time but I'm pretty sure that's it
