It was money and contract issues. They wouldn't give her the amount of money she wanted, or the promise to do at least 2 more seasons (which would have made an 8th season). So she left the show. And on her way out, she left them a big f*** you by breaking up Luke/Lorelai & having Lorelai sleep with Christopher, leaving the new writers to attempt to clean up that mess (& they only made it worse by having Lorelai & Christopher get married).
i think it had something to do with $, they didn't want to pay her what she was worth. the show wasn't as good when she left
