she was a prep cook at a resturant to begin with. Then She got promoted then fired. After that she waitresses on Skates for awhile. She started a catering business after that with phoebe and then got a job at allursandros from a review she did about the resraurant (that led her to being the head sheff) then she got a job at a flash Restaurant in NYC when chandler got moved to Oaklahoma for work.

She was not a chef in the early part of the show. She wanted to be but she had to settle for working in a restaurant. She was even a waiitress for a little while. She eventually moved up from being a sous chef to a chef role (there is a difference in those two roles).
She was a chef, because I remember the first episode she had a date with "Paul the Wine Guy", and she discussed her date with her other chef friend at work (both wearing poofy white chef hats).
