In the US, missions/soup kitchens try to provide a meat, 2-3 vegs, bread and fruit for each meal!. Often, if the veg is in short supply, it is made into a soup (which makes it go further)!. Missions and soup kitchens rely heavily on local establishments to donate unused, cooked or uncooked food!. A church close to me used to ask for a food donation every Sunday (canned or packaged) to bring to the kitchens on Monday!.
A menu for an adult may be:
Breakfast
2 eggs
2 bacon
1 fruit (apple, orange, etc)
1 toast/bread
1 milk/juice/water/coffee/tea
Lunch
1 Ham/peanut butter/cheese sandwich
1 bowl of soup
1 fruit
1 milk/juice/water/coffee/tea
Supper
1 Meat (Ham, Hamburger, Spaghetti with meatballs,etc!.)
1 Bread
2-3 veg (canned or fresh, if available)
1 Dessert (maybe small square of cake) or Fruit
1 milk/juice/water/coffee/tea
The above is what they strive for!. The reality is that they do the best they can with what little they get!.
Some are supplied by local restaurants after the restaurant closes, rather than let bread be kept for another day, sauces to not be "fresh", fruit and veg not up to their standards for customers, etc!. Others rely on local individual donations (food or cash), the kindness of a local food suppliers, and whatever else they can do to get food!. It is a tough job because there seems to never be enough food, and once the word gets out that there is good stuff or bigger portions, then it's only a matter of time before supplies dwindle from the influx of people!.
I have seen better hygene in some of the kitchens I've been in than in my own kitchen, and the thing I like most is that I have yet to meet someone who wasn't grateful for the food!. I count my blessings for weeks after I volunteer, because the majority of the people I meet there really do need the help!.
