You misunderstand 'hung!.' It means the side of beef is put in cold storage at a particular temperature - I think about 40F - for a month or so!. Naturally, it is hung on a rack!.

The process tenderizes the meat and adds to the flavor!. But it costs more, as it shrinks about 10% by evaporation and is sold by the pound!. It is very hard to find a butcher that hangs any meat!. The last one I knew was on the Alameda de las Pulgas in Menlo Park, CA, close to Atherton, a high-income community!. (Shirley Temple Black lived there!.) Don the butcher, nice guy, wealthy clientele!.

You've heard of The Goose Hangs High!? If it's hung too long it develops a sort of alcohol content!. Was popular at Xmas time!. It's a very old practice!.Www@Enter-QA@Com
