In the cookery business it's a traditional way to tenderise meat - giving it a good whack before putting it in the oven - or heated up in some other way.

If I'm making 'Chicken a la Duke of Albi', yes. The flattened breast allows the shorter cooking time the recipe demands.
You can substitute Quorn if you are a vegetarain and can't eat meat.

Large thick steak needs a good beating.
