i just jab it till it is, kidding
with fork i make lots of holes, then i add lemon juice, with chopped onion, a bit of paper, fresh basal, no salt cause it will make the meat harder. then i put in plastic bag for at list a day before cook it.
some times instead of lemon juice i use yogurt instead of lemon juice.

Or you can always boils a tough piece of meat, that often helps....
Just put it in the stew, and add broth and a carrot or 2!
It's purely a matter of choice.
Some prefer to beat their meat....while others prefer tenderizer.
Still--others combine the two.
