Health care facilities train their workers to never touch these knobs--after you've washed your hands, you're to use a paper towel to turn off these knobs. If you must pump some sort of a lever to dispense the towel, I use my elbow. You also don't want to touch the door handle/panel as you exit to protect yourself the germs of people who didn't bother.
