I would probably spend the day shopping with my maternal grandmother. We had the best times shopping together, laughing at some of the goofy clothes (late 70s early 80s so that wasn't too hard). Lunches out, running around doing errands would work too.
She's been gone for 22 years now and those are still some of the best times I've had.
