I think that they find it to be play, or " rewarding " work.
It is obvious that they love to help people..
And that they enjoy it.
I think it depends on the dog :]
I do not think that watch dogs realize that they are working. It is just that dogs are extremely territorial. They will do what their instincts tell them to do when they sense that their space is being invaded.
