I love lamb chops
Try some spices and marinated them...some honey, garlic, ginger and the 5 spices or some cinnamon powder.
When dealing with lamb alittle bit more of ginger is required as to avoid the deep smell of the lamb.

I actually love lamb shank. My husband is Greek so we eat lamb quite regularly. I make a mean lamb ragu, too.

One of my favorites is rack of Lamb. I like them peppercorn encrusted and medium rare.

I like to grill them in a vertical grill until the fat is crispy but not burnt.
That way, all the excess fat drips off into the tray below.
They are perfect on their own or with tomato sauce.

I like mine however I can get them :-) If you ever have a chance to go to Munich Germany (hey, you never know) there is a small restaurant in the "Marienplatz" that serves THE most mouth-watering lamb chops you'll ever eat. They've got to be at least 2 or 3 inches thick and are sooooooo tender. Ok...I have to stop talking now..or I will drown in drool lol.

I fry them one side briefly add alittle pepper and salt, then quicky flip over, which "seals" it. then i fry till both sides are cooked leaving the inside slightly rare. Mmm ok now im hungry!.
