The short answer is that the water on your tongue freezes solid between the skin on your tongue and the cold metal. For this to happen the temperature of the metal must be below 32 oF, otherwise the water cannot freeze. The lower the temperature of the metal the quicker your tongue will stick. Even your hand may stick to cold metal if your hand is a little sweaty – like when you pull your hand out of a warm glove.

Dude you've licked a poll? but why?

it freezes! haha cuz ur spit freezes from the cold poll, and ur tounge is covered in spit, so it's only natural! ^^

haha if you do it you will understand why.

your tongue is wet. so it basically freezes to the poll. go get beans or something in the package from your freezer and put your tongue out. if it is cold enough.. you will definitely understand why

The saliva on your tongue freezes and sticks to the pole. Works better with metal (poles and other objects) cause metal conducts the heat away faster and your saliva freezes quicker.
Mythbusters tested this (think they used a pig's tongue) -- it didn't stick when it was dry.
