All you expert bakers out there, I NEED HELP!?!


Question: I'm make a Lemon Meringue Pie for thankgiving and I'm not making the pie crust from scratch but buying frozen one from the store. The directions says to get 1 - 9inch PRE-BAKE PIE SHELL.

does that mean I have to throw just the pie shell into the over alone until it is baked take it out when done, then put it back in the oven for 10-12 mintures to cook the filling? the reason why I am so concernd is bc if I bake to pie crust on it's own until it's done, then put the filling in and bake it again, won't the crust burn?

What do I do?

Hi!
The crust will not burn...what it is doing in the first bake is setting itself for the meringue. Then you bake it all together. If you didn't do the first bake, the crust would be all soggy and unbaked.

You got it right on...just put it in the pie plate, bake for ten, pull it back out and add the rest of the ingredients.

Just buy a pre-baked pie shell, put your filling and meringue on there, and bake it for the time it takes. The pie shell won't burn, it will be fine. I work in a bakery and that's how we do it.

No, it won't burn. If you didn't cook it first the filling would seep into the pie dough and it would turn out all mushy so you cook the pie crust first. After you cook the crust and put the pie filling into it you're going to be putting meringue all across the top of it so the crust edges will be covered.
