Report it to the police and sue the farmer for not having adequate fencing.

try and move it off the road and then carry on, if not call police to inform them and let them deal with it
i know a girl that actually did that!! it TOTALED her car and she was very shaken up.
not sure what happened to the cow, i think it died.
check my car for dents then call the cops and report a dead cow on the road.

Call the Police who in tern could contact a vet. If the poor animal is already dead then the Police would have to remove it from the road because it could cause another accident.
Id get out the car and see if i could help the cow. if the cow had horns id simply call the police, which id also do if the cow lacked horns. and id feel terribly sorry! =(
Contact the insurance company and MILK it for all it was worth.
find the farm an apologise on offer a payment,if that's excepted phone butcher an get it chopped an freeze it. if not accepted ..........run.at least you would have a clearer conscience
realistically, hopefully walk away from the wreckage. cows are big and will total your ride if you hit one. then look for a brand with the ear tag so i can find the owner to pay for the damages. (hey i'm from dairy country)
