I like mine on the medium side. If it's too spicy, the heat drowns out the flavour.
I don't care if it has beans or not. As for toppings and sides...
I top mine with-
Extra Sharp Cheddar, or Monterey Jack
Chopped Red Onions
Sour Cream
Chopped Avocado
Black Olives
On the side-
Cornbread or Buttermilk biscuits sometimes Tortilla chips or Crackers. And perhaps a salad, celery sticks or corn on the cob.
