Tchaikovsky: The Nutcracker Suite
Holst: The Planets
Beethoven: Symphonies No!. 5 and 6
Puccini: Highlights of La Boheme (Pavarotti)
Tchaikovsky: Romeo & Juliet Overture
There's also a great series called "Chill With!.!.!.!. and I can recommend "Chill with Mozart" and "Chill with Schubert"!. They're a good way of getting to know some of the composers without spending too much money!
and although they're not strictly classical but are absolutely beautiful:
John Barry: The Beyondness of Things
Karl Jenkins: Adiemus
Anuna: Essential Anuna
I know the classical albums I've listed sometimes get scoffed at as "popular classics" but they are some of the most beautiful music ever so don't let the fact that they're popular put you off!.Www@Enter-QA@Com

I agree that the "best of" CDs are probably a great place to start, and if you like particular composers better then expand your recordings according to that!. If you are interested in opera singers, I recommend Cecilia Bartoli (lyric mezzo), Janet Baker (lyric mezzo), Renee Fleming (lyric soprano), Diana Damrau (coloratura soprano), Luciano Pavarotti (tenor), Franco Corelli (tenor), Bryn Terfel (baritone)!. There are many others I can recommend, but I think those are pretty mainstream singers that you will love and are good for beginners!.Www@Enter-QA@Com
It's not always wise to start with "classics of the classics", just do some more research and find out what really interests you! Often it is the small-scale works which are great starting points, for example check out what the smaller record labels have in offer for you!.Www@Enter-QA@Com
I'm not an expert but i do enjoy some classical music but i think everyone's taste is different so you might be best of buying a compilation finding what you like and then buying more of that type!.Www@Enter-QA@Com
