You can get some travel play dough, my son loved this when we went on a plane (the flight was 6-hours and it occupied him for ages) in the travel packs you get a small mat the size of the plane trays, 2 tiny pots of dough and a small plastic thing to make wriggly worms out of the dough :-)
also the classic: colouring, some short books he hasn't read before, a few small cars, always get NEW stuff not stuff he has already as new stuff with catch his attention!.
LOTS OF FOOD: those baby chrisps, sugar free sweets, grapes - any fun food that he will sit for a while to eat!
Drinks, stickers, small blocks, toddler magazines, those large picture cards!
also, i used to keep my son awake until we got on the plane and he was totally knackered and slept for most of the journey!
