Oh man this is so tough, there are so many great ska bands.
Right now I'd have to say Mephiskapheles as I've been going through a phase with them.
Other favorites of mine include:

And anything Mike Park has been involved in.
The Skatellites, Prince Buster, Toots & Maytals, and the Specials are my favorites that I've heard, but I'm only just now dipping my toe into the genre.
