well since they're all different styles of music for the most part, you're only going to get answers based on who is a fan of a particular band........
however, talentwise, eric clapton is the best guitarist of the group (no dispute about that).
the eagles however sound awesome live, and are a legendary band. most likely they sound the best live.
alice in chains is the darkest of the bunch, and actually pulled off an amazing unplugged. they are definitely the most talented musicians of the seattle bands.
nirvana, i hate to say it, had a pretty unspectacular unplugged. cobain might be the most overated guitarist ever to make it big, and it showed live, without being able to hide behind distortion.

I have both Eric Clapton and Nirvana's 'Unplugged' albums and they're great, so I'm gonna be partial to those two ;)

Alice in Chains and Eric Clapton, I have all of the albums you have mentioned. Try to watch the video and you'll see the reason why I have chosen AIC and Clapton over Nirvana and Eagles.

Clapton Unp. has some of his hits, a TOTALLY different version of Layla (that i am sure you have heard), plus some old blues tunes that segue into his Robert Johnson tribute of years later. Everyone is relaxed and obviously having a great time. Great addition for any Clapton fan.
Eagles HFO is a great lineup of their bigger hits and some newer tracks. (I love "get over it", a lot of posters here could use a lecture like that.) If you haven't heard the acoustic intro to Hotel California, that is definitely worth it. Everyone in the band is in prime form. It has more of an intimate sound, really well engineered. Not one of those loud concert recordings.
Can't speak about the others, not my cup of tea, plugged or not.
