I like very much the Adagio from the New World Symphony by Antonin Dvorak.
Stravinsky's Symphony of the Psalms (but it's darn hard to choose with between this Rite of Spring, his Violin Concerto among other things). But if you were refering to classical music as in the classical peroid, I would have to say Beethoven's Egmont (this is not what I think is best it's just my favorite).
The 4th Movement of Dvorak's 9th Symphony. Always gets my blood boiling.
Also the Prelude to Lohengrin

Cesar Franck' "Le Chasseur maudit"(The Accursed Huntsman".
Wagner's "Der Ring des Nibelungen"(could not possibly omit this).

hmm. REAL classical? like the era? ok, well, i was going to say montagues and capulets from sergei prokofiev, but if it's going to be classical, then i would go with che farò senza euridice? from christoph willbard gluck's orfeo ed euridice. i'm a huge opera fan, i love everything about it!
Bach : solo suites for cello. Yeah, I know...that is six pieces but I could not pick one out as the best.
