The late Emily Remler was a terrific guitarist.
Akiko Tsuruga plays the Hammond B-3 organ just as good as the past masters Jimmy Smith, Jack McDuff and Groove Holmes.
Bobbi Humphreys on flute.
Patrice Rushen on piano.
Jeri Allen on piano.
Regina Carter is an amazing jazz violinist.
Jane Ira Bloom plays saxophone, mostly soprano
Diana Krall is just as accomplished on piano as voice
Terri Lynne Carrington is a top notch drummer
Candy Dulfer plays alto sax and is probably the best of the 'chick-jazz' players.
Mary Lou Williams, Maria Schneider, Marian McPartland - great pianists all.
The Nuclear Whales Saxophone Orchestra has a few women players and guest artists.

One of the best sax players right now (of either gender) is Anat Cohen.
Also worth checking out: violinist Regina Carter.
On piano, Marian McPartland or Toshiko Akioshi. For a whole band listen to Diva, they are fantastic.
