I play a lot of Jimmy Buffett songs... they are mostly easy... except the ones with 5 sharps, that is... and they all have solos

nirvana songs are easy but not really any solos in them. john mayer waiting on the world is pretty easy but i don't think there's really any solos in there either.
but if you learn the major scale or easier and kind of more fun, (i would start by learning this one) the pentatonic blues scale. if you play around with that scale that's the right key for the song you're listening to you'll probably be able to make some solos pretty quickly.
the way you find the key of the song is usually to see what chord it ends on.

I just thought of santeria by sublime but the solo is pretty difficult for a beginner.

Well for me The Black Parade by My Chemical Romance tab was easy to learn and has a pretty good solo.
