Trent Reznor (Nine Inch Nails) - almost everything you hear on almost all his albums was played by him. Guitars, vox, bass, drums, synth, piano, you name it. I know it's not necessarily the most, but just the first notable one that comes to mind.
Sting...I can't think of one intrument I have not seem him play.

James Hetfield sings plays rhythm guitar and can solo really well, too. Can play drums and can play bass. I don't think he played a real sitar for "Wherever I May Roam" But if he did then you can add that too ; ) I dont know of anything else.

Bass and guitar are pretty common and interchangeable. Keyboards/piano are basic if you know music. The only one I think you are either born with it or not is playing the drums. Sure, you can learn, but there are definitely drummers out there that have it in their blood (Keith Moon, Mitch Mitchell, that guy from the Pixies..)
What other instruments are there, really? Horns, wind, orchestral strings?
