Well , Steinway are regarded as the best pianos in the world by many people so it makes sense to advertise the fact that they only use the best.
Like a car rental company saying "we only have Rolls Royce".

If they're performing at the school, the piano will not be worse. All Steinway schools generally have all Steinway uprights and concert grands. Some Steinway schools also have the Steinway-made brands of Boston and Essex, equally good pianos, but less expensive.

They are proud because they can offer their students high-quality instruments to practice and perform on. My school is wanting to become an All-Steinway school, and I wouldn't mind because our practice room pianos are crap.
