Tenhi are a Finnish band that make beautiful music with accoustic guitars, piano and strings. It's truely beautiful and really relaxing!

Only thing is, the lyrics are in Finnish...although their latest albumn, Maa?et has the english translation in the accompanying booklet.

Fall of Troy has one song (uses an elctric guitar with acoustic simulator) called Caught Up that is laid back. Their other songs have screaming and odd guitar work, it takes getting used to but I really like it.

you should try listening to darren hayes. Truly the most amazing voice i have ever heard. Some songs are so beautiful they make me want to cry. He is the main singer from "Savage Garden". Once the duo broke up, Darren went on and continued creating amazing records. I highly recommend you at least checking out some of his tunez.
If you like sarah mclaughlin, you might like some amanda marshall. some of her music kind of reminds me of Alanis Morissette but a little softer.

There are numerous songs that I can think of : triumph / suitcase blues and midsummers daydream, Rush / resist-live from r30, tears,different strings. then there is bruce cockburn, gordon lightfoot, liona boyd, max webster's words to words and diamonds diamonds. Although all are not accoustic they are very mellow and relaxing.
