There's a bootleg from the mid 1990s called Covering Them that was pretty widely circulated. You can check out the track listing here:

Some tracks are from a Bob Dylan concert in 1984 at Slane Castle. Dylan called Bono onstage to sing "Leopard Skin Pill Box Hat," who was too nervous to tell him he didn't know the words. The result is a complete disaster. "Helter Skelter" from the 1987 Joshua Tour sounds great .
