In the field of jazz, D.J. Reinhardt did more with three fingers than most could ever hope to do with four. Check out "Minor Swing".
In classical, try any of the fugues by Bach. Their multi-recursive nature makes them all but impossible to play at tempo unless you are an extremely skilled musician. (www.classtab.org)
