Once you play two note simultaneously, you're already playing polyphonically. If you're talking playing harmonically, (Like Thin Lizzy 'The Boys Are Back In Town' or the Scorpions "Hurricane' The Beatles 'And Your Bird Can Sing' [Just 3 tunes off the top of my head.]) you need to play the harmonies appropriate to the key of the song. Your harmonies can be from the conventional (playing a simple root-third harmony) to the way out there (Root-thirteen!).
