Well, it's definitely worth a shot!

Violin would take longer for you to learn; you would have to learn all the technique which is completely different from keyboard instruments. Keep in mind that learning the violin is a slow process at first and everyone sounds bad for a while, so don't be discouraged. On a lighter note, since you're already familiar with how to read treble clef and know what the pitches should sound like, you have a definite advantage in taking up the extra instrument. Stay dedicated, find a good teacher, and you'll progress quickly.

Organ should be much easier for you to pick up since you have a piano background. Articulations on the organ are different from that on piano since there isn't any sustain. When I started organ lessons, I thought that the keyboards were separate for no specific reason, but you'll find that each part of the organ has its own purpose. Overall, the the biggest differences that would require the most learning are getting used to the foot pedals and the overall technique as well as becoming familiar with the different voices and how to use them for different styles and pieces.

Speaking from experience, taking lessons on three different instruments at the same time is definitely a challenge, but well worth it. Find good teachers and make the most of your lessons and you should be fine!
