Question:

Why almost all the jazz groups and orchestras DON'T use percussion instruments like congas,bongos,maracas,etc...

Answers:

It is obvious that you have not seen "almost all the jazz groups" because many of them, and not just Latin specialists use hand drums and small percussion. Corea's Return To Forever band used Airto Moreira and other percussionists always. My brother was just talking to me a couple of days ago about playing hand drums with his rock and roll show group! As another poster mentioned, it is a matter of economics more than anything. Certainly Latin specialists would not do without the percussion but many bands, from Allman Brothers to Frank Zappa always use(d) percussionists. The United States Government backed Airmen of Note always use percussionists. Many bands will employ their percussionists for bigger shows and recording projects, but just use the drum set on smaller gigs. It is the same reason you find so many one-man-bands and small combos and so few "big" bands working today. It is economics!
