Question: Why was he originally arrested and sent to prison by the judge, which lead to his pursuit of revenge? I know the judge wanted his wife, but what did he arrest him for & send him away for in the beginning?

There was really no reason at all. The Judge just wanted his wife so he sent Benjamin/Sweeney to jail. But in "Wait" Sweeney asks " what was his crime?" and Mrs. Lovett says "Foolishness". So it's probably both of those.

There was never a reason, just that he was sentenced to a life of labor in Australia.

He was a barber who killed his clients for cash while his accomplice used their meat for her pies

it depends- if you are asking for the original 1800's sweeney todd then its a myth/folklore although many people did resort to cannibalism and there is a recurring tale of murderous barber- but fleet street is an unlikely destination.

"There was another man who saw that [his wife] was beautiful, I pious vulture of the law, who with a gesture of his claw, removed the barber from his plate...then there was nothing but to wait."

In other words, the corrupt and hypocritical judge used his power to try to get to Lucy by framing Benjamin Barker for a trumped up charge.
