Dude, Jim Carrey is my all-time favorite comedian, this is exactly like asking me to choose between my kids.
But if i had to choose, I'd say that my top 3 favorites are Dumb & Dumber, Ace Ventura (both of them) and The Truman Show. Dumb & Dumber and both of the Ace Venturas bring back childhood memories, i used to watch them almost everyday back in the early 90's.
Jim Carrey is a brilliant and an extremely versatile actor, in a comedy movie he can make you cry from laughing so hard and in a drama movie he can make you cry from sadness. Not nominating him for an Oscar for his phenomenal performances in movies such as "The Truman Show" and "Eternal Sunshine of the Spotless Mind" proves that the Academy is nothing but a pile of crap.
I LOVE The Cable Guy.

The only Jim Carrey movie I own is The Number 23. Not a comedy but an awesome movie.
I think one of his best, and my favorites, is The Truman Show. As far as a more comical Jim Carrey film, I have always really enjoyed Liar Liar.

I really enjoy a lot of his movies, but I think they really did something special with Eternal Sunshine.
Those are two great movies you listed.
I'll go with Dumb and Dumber as my fave, too. They never crack a smile or 'wink' at the camera, and the ending... just KILLS me! I'm going GET ON THE BUS!!!! ...but they don't. True to the end.
