Entire generation of cocktail waitresses ?!

Question: Kathleen : As if you were one of the stupid 22-year-old girls with no last name. "Hi, I'm Kimberly." "Hi, I'm Janice." Don’t they know you’re supposed to have a last name. It's like they're an entire generation of cocktail waitresses.
Joe : Look. I am not a 22-year-old cocktail waitress.
Kathleen : That's not what I meant.
Joe : And when I said the thing about the Price Club and the cans of olive oil that's not what I meant.
Kathleen : Oh, you poor, sad multimillionaire. I feel so sorry for you.

( It seems Kathleen and Joe have an argument about Joe not telling her his whole name, but what has it to do with "cocktail waitress" ? ) Can anybody explain it ?

I think that a lot of women and men who are waitresses and waiters and in the service industry, use quick simple little names that make them easily identifiable to their customers. And they never tell anyone their last name. Hey by the way is that from the movie The First Wives Club, or Sleepless in Seattle I want to know!!

Cocktail waitresses wear nametags that contain their 1st name or nickname and are referred to by their 1st name only. This is just a comparison to that and the brevity of the relationship of cocktail waitress and customer.

I think Kelly's right.

Its not necessarily cocktail waitresses she is talking about. She is talking about how informal society has become where people are casual, as casual as one might expect a cocktail waitress to be. The casualness that is in a cocktail waitress (Hi I'm Janice) is acceptable from the person who is going to serve you drinks but in a polite society an introduction includes your last name.

The problem with Joe not telling her his last name is that she would immediately know he is part of the Fox Bookstore that is opening around the corner from her shop. She thinks that he purposefully kept it from her so he could learn about her business.
