Initially I thought of Will Sampson's chewing gum scene in One Flew over the Cuckoo's Nest, but he didn't win the Oscar, and he's not far back enough.
Looking through the list of b/s winners, I can't see a likely candidate, so it's either a performance I'm unfamiliar with, or a trick question!
UPDATE: Are you talking about Rod Steiger in In the Heat of the Night? If so, he won Best Actor, not Best Supporting Actor! (Never actually seen the film, I must admit!)

I'm not sure that I would notice someone chewing gum really. Denzel sort of chomps it a lot. I've noticed Johnny Depp doing it. So, I'm supposing that this is a movie I might not have seen yet since I have to rely on cable movie channels.
Picturing who might do this, I'd guess someone like Benicio del Toro. Really, I'm clueless here.
