It depends on many factors:
If the movie (or the scene in question) is being shot on a soundstage, where all the elements can be controlled (and you can reproduce any time of day and any situation through lighting, weather machines, etc) they usually film weekdays from 8 to 5.
If it's being shot on location (out in the real world) it depends on the logistics of the shoot, and when it will be feasable: if you need to block off streets, sometimes you aren't allowed to film during rush hour or lunch hours, or when large events (baseball games, concerts, etc.) are taking place.
Sometimes because of logistical concerns you're forced to film on weekends. For example, the big bank robbery and shoot-out in the street in the movie "Heat" was filmed entirely on Sundays (when the business district it takes place in is the emptiest and closing the streets and shooting guns would create the least disturbance) and it took them several months, going back each sunday, setting everything back up again, and filming another couple of shots.
Ideally, for the benefit of the cast and crew, you'd have normal Monday-Friday, 8-5 days. But beacuse of all the external factors, it's almost never possible. Often producers will try to keep weekends (or two-day stretches of days off) intact in order to help the crew make the transition from shooting days to shooting nights (because even if the scene takes place at 9 at night, they'll film throughout the night and sleep during the day).

I'm sure they film whenever they feel is suitable for the certain scenes. It all depends on what time of day, the weather, the filming location, actors, or when the producer/director feels like they want to film.
