I can think of two who have been in two trilogies but not three....
I'm thinking of Christopher Lee who was in Lord of the Rings and Star Wars and Hugo Weaving who was in LOTR and The Matrix films.......

Christopher Lee -- Fu Manchu movies, Lord of the Rings, Three Muskateers, Dracula movies. Technically, though, Fu Manchu and Dracula weren't trilogies (neither are a lot of these others we're calling "trilogies"). Lee almost qualified for Star Wars though. Lee was in Revenge of the Sith and Attack of the Clones but not Phantom Menace.
Can't think of anyone else that's been in three trilogies but can come up with two.
Matt Damon was in the Bourne Trilogy and in the Oceans 11, 12, and 13.
Orlando Bloom was in Lord of the Rings and Pirates of the Caribbean
Sylvester Stallone - the Rockies, thre Rambos,
Mel Gibson - the Lethal Weapons, the Mad Maxes
James Earl Jones - Star Wars and Patriot Games/Hunt for Red October/Clear and Present Danger
Hugo Weaving has been in two and a half. Matrix, LOTR, and the 2 babe films (not a trilogy, but was part of both films).
And Mike Myers is in 2 and half. Shrek, Austin Powers and the 2 Waynes World fims.
