Castle In The Sky-it's anime, but really good
Stardust-i think that other chick gave you the rundown on that, more than you'll ever want to know...lol
The Princess Bride
L.O.T.R., obviously and Harry Potter if you haven't seen them
The Wizard of Oz
King Kong (old or new, both are good)
Spirited Away and Howl's Moving Castle- again, anime but good...

These are old but The Princess Bride (it's more of a comedy than a straight fantasy film) and Willow are both good movies.
Another good one might be the Neverending Story.

harry potter comes to mind as well as japanese animation like "Spirited Away" which i highly suggest seeing

Plot: The passage from this world to the fantasy kingdom of Stormhold is through a breech in a wall by an English village. Assisting Tristan are his mother, the victim of a spell, and a transvestite pirate of the skies. Will Tristan win his true love?

Synopsis: A young man named Tristan (Charlie Cox) tries to win the heart of Victoria (Sienna Miller), the beautiful but cold object of his desire, by going on a quest to retrieve a fallen star. The obvious ones are the Harry Potter series, the Lord Of The Rings series, and the Star Wars films. However, you probably want something besides them.

Have you seen Sky Captain And The World Of Tomorrow? I liked that film a lot. It is set more in the past rather than the future.

Stardust is a recent title along the same lines. Critics loved it, but audiences never found it.

Final Fantasy had a great look to it, but I found the story itself to be rather hollow. Perhaps that's just me.
