I don't think it's water. it's something to mask his scent or maybe it is water and he's washing away the tracks. Either way, he's hiding his residence from the mutants.

It wasn't water. It was ammonia or vinegar (I forget which) to hide his scent from the infected.

It's not water, it's probably something to hide his scent. They shouldn't have let him die at the end. That's the stupid part of the movie. He should have thrown the grenade through that hole and then gone with the others.

If you looked carefully at his food supply, you would have seen a proliferation of gallon jugs of vinegar.
It might have been a way to disguise his scent but I don't know how well the sense of smell of a zombie is. It could have been a deterrent of some kind.
