"The Shadow" (Alec Baldwin) comes to mind. The 'monster' in the movie is Shiwan Khan (John Lone). The plot is similar...so I guess this might be it.
The Relic (1997), starring Tom Sizemore, Penelope Ann Miller, and Linda Hunt.
Although he's not a monster, John Lone's character emerges from a sarcophagus and does make a guard commit suicide. Again, he's not a monster. This is in "The Shadow", as the first poster suggests.
There are several movies with monsters in museums. "The Relic" is one, as is suggested by the second poster. "Hellboy" is too recent to fit what you are looking for.
So, it seems there might be yet another movie, right? I'll try to track this down if at all possible.
