Yeah, I saw that movie today too. Maybe it was meant to say like they were doing so well, that she could afford to look better. Maybe, it was to show a change in the lives of Sweeney and Mrs. Lovett.
Yeah it seems she dyed it when she got rich to be fashionable.
I think I remember as it being red the whole time, but when she was singing "By the Sea" her hair was brighter because it wasn't in the black and grayish color. If I remembered it right.
