Added scenes, as well as scenes with more added to them:
Isildur's death.
Bilbo's opening narration "Concerning Hobbits".
Bilbo at Bag-End avoiding the Sackville-Bagginses.
Bilbo and Frodo dialogue at the party scene, while avoiding the Sackville-Bagginses.
The Hobbits at the Green Dragon.
Frodo and Sam seeing Wood Elves making their way to the Grey Havens on their first day of their journey across the Shire.
The crossing of Midgewater.
Aragorn singing "The Lay of Lúthien".
Sam shows Frodo the trolls when they are at Trollshaws.
Gandalf reciting Black Speech at the Council of Elrond.
Aragorn visiting his mother's grave.
The Fellowship given a goodbye at Rivendell.
Gandalf warning Frodo about Boromir near Moria.

Twenty of the original scenes have been extended.
Mostly, it just extends existing scenes. From the prologue to the party, there are a lot of extra bits and pieces about the backstory and hobbits in general.
Frodo and Samwise see a group of Elves preparing to leave Middle Earth.
I think there's more about Aragon and the lady elf (can't remember her name--Liv Tyler).
The Council of Elrond is a little longer, and you see a bit more about Boromir's motivations.
The fellowship has a tougher time getting into Lorien, and there's more about the gifts she gave each of them. (The leaves of lothlorien are referred to in the second movie when Pippin drops them to leave a trail. "The leaves of lothlorien do not fall lightly." or something like that.)
There are even more bits and pieces added, but these are the main ones I remember. The extended edition is about 30 minutes longer. If you like the movie, it's definitely worth renting even if you don't want to spend the money to buy a new one.
