Hobbits: They have a strong resistance to evil, High constitutions and their love of simple things and simple lives allows them to withstand nearly any danger they face. Gandalf said of hobbits that you could find them sitting on the edge of ruin drinking, eating and talking as though it were a bright sunny day in the shire and they had not a care in the world.
Wizards: Are a race of "angelic" type beings sent to middle earth to stop the plague of Morgoth (of which Sauron was only a servant). There are five in middle earth all told, each with their own specialties; Gandalf worked with fire and light, Radaghast spoke with animals and could transform into a bear from time to time, Sauruman has is vocal thing going on. The other two aren't mentioned as much, only in passing.
Elves: Because of their immortality they see the world differently. They are both a part of the world and removed from it. They have a natural affinity with living things. It was they who woke up the ents and started them talking and walking. They don't see it as magic but most of the rest of middle earth does.
Dwarves: They are stout and hardy folk. They are master craftsmen of stone and metals. They built great kingdoms like Moria and the kingdom under the mountain (who's name escapes me at the moment). Their history and heritage is not discussed in great length in LOTR, except in the appendix.
Men: While they are the most dominant race in middle earth they are not always the most well liked. They tend to be power hungry and greedy. Certain races of men (numenorian, for example) are blessed with long life and can see into the hearts and minds of men. Aragorn had this ability and carried the strength of his race, (although this was very poorly portrayed in the movies). Denethor also had this ability, once again, not captured in the movies. Most of the art and craftsmanship of men was lost after the first fall of Sauron.
The ring of power was a ring created by sauron to rule over the other rings created for the other races. There were 3 rings of the elves, 9 rings of men, 7 rings of the dwarves. At the time, Sauron was trusted. It was not until the one was created that he was revealed in all his malice. The elves hid their rings from him, he never saw nor touched them. All of the dwarf rings were either lost to Sauron or destroyed in dragon fire. The nine rings were given to mortal men and they became the ring wraiths. The different rings were given dominion over their perspective races. The one ring would have given sauron dominion over all races.

Yeah I see what you mean even though I'm a LOTR fan it is quite hard to put into words what the special features of man are.
