It IS difficult to pick one. This film is one of my guilty pleasures. I happened upon it when I needed it most: recovering from surgery and not doing a very good job of that. I was hurting so much, and Ben Stiller and the rest made me smile and even laugh. Since then, I've watched it a number of times and wonder why it isn't aired on the movie channels.
Among my favorite scenes are the ones in the coalmine then in the bar with his father and brothers, coughing delicately before suggesting he has "black lung". Then, the commercial comes on, with merMAN Derek proclaiming, "Moisture is the essence of wetness, and wetness is the essence of beauty." I also laugh at his outrage over the scale model not being large enough for any students, the Walk Off, the celebrity cameos, and the insane scene in the cemetery when the ex-hand model (David Duchovny) attempts to outline the history of using models as assassins.

That movie is the best! I loved it when Mugatu says "I'm a hot little potato right now"!!!! But there really are so many good lines!!!!
