this is prolly the stupidest question ever, but would it be better to read the 6th and 7th book and know what will happen in the movies, or build up the suspense and just watch the movie

The movies do change/edit out a lot of stuff so if you read the books and would be disappointed about changes, then it'd be best to just wait and watch the movies.
But I would recommend reading the books, they're very good. Just don't expect the films to be too similar
